Greetings from Valley End Farm!

The winter is always a busy time of the year for us, as we prepare for the spring by taking on new projects. We have been looking into planting fruit trees on the land, establishing new drop-off points, and general cleaning around the property.
This week’s box is abundant with winter-time veggies: cauliflower, grapefruit, red chard, rosemary, green and red butter lettuce, purple majesty potatoes, carnival squash and watermelon daikon radishes. In this week’s box is a recipe for a winter-crunch salad, which utilizes the white cauliflower and watermelon daikons. These daikon radishes are sweet and peppery to the taste; slice one open, and you’ll see where the watermelon name comes from, as the interior is pink. They are high in Vitamin C, potassium and dietary fiber, and are considered nutritious, a welcome addition to salads and soups. Carnival squash is a seasonal winter squash, hardened on the exterior and similar in taste to sweet potatoes. It is extremely rich in Vitamin A. The winter-crunch recipe is a good compliment to this week’s box, as many of the veggies can be used in improvised salads or other similar dishes.
We would like to hear your feedback on our boxes, what recipes you would like to see and what vegetables you would like to try! Send us your thoughts via email, valleyend@hotmail.com, and spread the word of our CSA service; we are always looking to expand our customer base.
